Ines Enriquez-Cobo, RN, CDE
A registered nurse with over 15 years of professional experience, Ines has specialized in the area of Diabetes Education for the last 10 years, Ines is a certified insulin pump trainer for all insulin pumps and continuous glucose sensor. She has worked with Palm Beach Diabetes for over 8 years.
Gail Starr, LCSW, CDE
Gail received a Bachelor of Arts degree from Queens College, NY and a Masters in Social Work from Barry University, Miami, Florida. Gail has worked as a medical social worker and diabetes educator at South Miami Hospital and is currently a counselor and diabetes educator at Palm Beach Diabetes and Endocrine Specialists, P.A. She specializes in eating disorders, life transitions, and depression.
Jessica Cook MS, RD, LD/N - Diabetes Educator
Jessica graduated from The Florida State University with a Master's Degree in Clinical Nutrition and Bachelor's Degree in Dietetics. Jessica has experience working as a clinical dietitian in a hospital setting and has volunteered for various diabetes centers educating the public on the importance of nutrition.
Scott Hoffman, MS, RD/LDN
Scott is a Registered Dietitian and received his Bachelor of Science degree in Exercise Science and Dietetics from Florida State University, as well as his Masters of Science in Clinical Nutrition. While at Florida State, he interned with the Florida State Football team as a Strength and Conditioning Coach/Sports Nutritionist. Scott has worked in a number of healthcare settings including, skilled nursing facilities, home health care and corporate wellness.
Monika Lambertson, MS RD LD CDE
Monika is a registered, licensed dietitian and certified diabetes educator. After completing a Bachelor and Master of Science in Dietetics at Florida State University, Monika began her career as a clinical dietitian working in the hospital, sub-acute, and long-term care settings. With a personal interest in diabetes, Monika shifted her focus to diabetes education and has worked as an educator at Palm Beach Diabetes and Endocrine Specialists for over 4 years. She specializes in medical nutrition therapy for diabetes, weight management, mindful eating, hypercholesterolemia, and polycystic ovary syndrome.
Mary Henderson Paley, MS, RD, CDE, LD/N
As a Registered Dietitian with over 25 years of career diversity, Mary has recently narrowed her focus in order to reap the rewards and challenges inherent in providing nutrition, weight, and diabetes counseling to a variety of populations and backgrounds. She envisions herself as a nutrition and diabetes resource, a health coach, a facilitator and guidance counselor all rolled into one. In her own words, “There is no greater satisfaction than helping and empowering others to be actively involved in improving their health in order to optimize their quality of life.” Mary received her Masters of Science in Nutrition from the Massachusetts General Hospital Institute of Health Professions in Boston.
